Pork-bone tonkotsu that simmers through the night, a vegan miso with nothing missing, and 30 seats pouring bowls until 1am.
The 18-hour tonkotsu
Our broth goes in the pot at seven in the evening and nobody turns it down. By lunch the next day the bones have given up everything and it pours thick and milky.

Two broths, two pots, two sets of ladles. Order the vegan miso and nothing from the pork pot comes near it.

Off a late shift, out of a show at the Logan, or just not ready for bed: the kitchen keeps pouring until 1am, every night of the week.

30 seats, open until 1am. Twelve stools face the pots and stay for walk-ins; the other eighteen are tables you can book.
Tables for two to six, any night from 5pm until 1am.
The counter is first come, first served. Solo diners usually sit within minutes.

The tonkotsu is thick enough to coat the spoon. I think about it on the Blue Line home.
Finally a vegan miso that isn't an afterthought. The whole table ended up ordering it.
Off a late shift at 12:30 and they still served us like it was eight o'clock.
Thirty seats, always busy, never rushed. Our Friday night for four years now.
Tables for two to six, 5pm to 1am. We hold the counter for walk-ins, so there is always a way in.
